What types of meat and cheese can be taken on a hiking trail and NOT spoil? Hard salami? Aged cheddar?

I want to do a 5 day hike and bring meat and cheese to make sandwiches. Hard salami, tuna in a vacuum pouch, aged cheddar, beef jerky? Do these spoil? Are there any more options? I need something that I don't have to cook, because I hate eating "power bars" for lunch.
